Ynyshir Hall continues to be at the top of its game

Ynyshir Hall Awarded Penderyn Restaurant of the Month™

Ynyshir Hall Hotel has one of Wales’ most elegant and exciting restaurants and retains a clientele that is both local and tourist who beat a path here specifically for the formal luxury of starched linen, clear crystal, fine porcelain and superb, exciting, and visually stunning food.

There are both set and a la carte menus that feature hand selected fish and shellfish, and the restaurant’s large kitchen garden produces plenty of herbs, asparagus, salads, soft fruit and baby veg. Joan, the general manager, collects samphire and other wild foods, including wood sorrel and wild garlic and, because the air, soil and water are all so pure, the tastes and aromas are quite exceptional.

Stephen Davies, managing director of Penderyn, said: “The Ynyshir Hall is a fine dining experience and, although the hotel has been successful for many years, it is still evolving and experimenting to create new dishes from old favourites.”

The team, led by the chef, Shane Hughes, and manager, Joan Reen, are committed to serving the best that this region of Wales has to offer and they have an award winning wine list that compliments the cuisine.

Joan explained: “When you start with only the finest and freshest ingredients, and add a passionate and talented young Chef , you already have a recipe for success!
Toss in sublime surroundings and a dedicated team of professionals to serve you, and you can almost guarantee it!
We attract guests from all over the world, and we love to show them the wonderful produce that Wales has to offer.
We are very proud to win this award from Penderyn. We love their products and Chef has created a special Penderyn Chocolate Truffle as a fitting end to a wonderful meal!”

Solitude is precious and readily available at Ynyshir Hall, once owned by Queen Victoria and set amongst breathtaking scenery in the secret heart of Wales.
Ynyshir is a member of the prestigious Relais & Chateaux Hotels, which is a collection of the finest Restaurants and Hotels in the World.
It is now also proud to be the only von Essen Hotel in Wales.
This luxury country house hotel in Wales has the good fortune to share its Dovey estuary location with one of Britain's finest bird reserves, the RSPB Ynys-hir Nature Reserve. The walk to the estuary from the hotel is a magical ramble. The Dovey estuary is also the only Welsh Biosphere Reserve.

There’s a wealth of superb, fresh local such as succulent Cardigan Bay seafood landed at Aberystwyth and Borth, wild salmon from the local rivers, venison and wild game; the pork is all organic, the bacon is all hand cut for breakfast, sausages are all made by the local butcher to Ynyshir’s own recipes. The free range chicken and the beef are second to none, Welsh farmhouse cheese is the finest anywhere, and, of course, tender-sweet Welsh Mountain Lamb.
